Any recommendations missing from my list?

We're staying for 7 nights this upcoming January and the 180-day ADR window begins tomorrow! Here is the list of dinner ADRs I'll be making thus far..
  • Story Book (we are staying at Wilderness Lodge and would largely prefer to stay on property the afternoon we arrive)
  • Chefs de France (originally Le Cellier, but I'd rather get steak at Wine Bar George)
  • Be Our Guest
  • Morimoto
  • Wine Bar George
  • California Grill
  • Citricos
We are missing 2 ADRs for dinner. We will be in Magic Kingdom the first day, and Epcot the second. The restaurants don't have to be in the parks... we are willing to go anywhere on Disney property, except we don't have a park hopper ticket.

So the new Japanese upscale restaurant starts taking reservations July 16; it is adjacent to the Japanese pavilion. Another choice would be Jaleo @ DS; I have not eaten there but have at his DC restaurants and they all have been good to excellent. One final suggestion would be the rooftop restaurant at The Rivera; it’s scheduled to open in December. Enjoy!

One of our favorite Magic Kingdom Restaurants is Liberty Tree Tavern. We have never had a bad meal there. If you want to jump out of the park for a bit, we have enjoyed Narcoosees and Ohana (although last time wasn't as great as it had been.) On our list for January as well is The Wave at the Contemporary. I have been seeing some really good reviews coming out of there.

Epcot has so many good restaurants. We are really wanting to try the new Japanese Restaurant, Taikumi Tei (I think that is the spelling). We also really like Beirgarten, it's a buffet, but we have really enjoyed it. On our list to try next time is Restaurant Marakesh. I have seen some really good reviews on it as well.

For Disney Springs we really love the Boathouse. Or you head over to Animal Kingdom Lodge and do Sanaa or Jiko.

Just some thoughts! Good Luck choosing. We are almost to the 180 day mark for our January trip as well. My daughter has had our restaurants picked out for months!
 

Sanaa is my favorite but it's at AKL Kidani Village, so a little out of your way.

Thanks for this info! The Japanese place looks a bit too expensive, so we're going to try the rooftop restaurant (7:30pm ADR so we catch the fireworks). Perfect reason to jump on the skyliner after getting a drink at Epcot!
 
Narcoosees for MK area-the most amazing lobster I’ve ever had and I’m not a crazy lobster person
Via Napoli in Epcot is a must do for us every trip
 
For your Epcot night definitely eat in one of the countries. It's one of my favorite parts to being in Epcot is all the great dining options. Check out the menus and see what appeals to you best. The Epcot resorts also have some great dining if you want to pop out of the park to get dinner then go back for fireworks. For Magic Kingdom would you consider Cinderella's Royal Table? The food is okay, but it's really cool dining inside the castle and meeting the Princesses.
 
I think you have great choices but if it were me, I would take out California Grill and replace it with Narcoossee's (better food and still see the fireworks).

Would also consider: Boma, Sanaa, Raglan Road, Rose & Crown
