Is there any such dining plans that offered limited fast services or full service options?

You have three basic dining plans:

QSDP-Quick Service (Fast Service) that gives you 2QS, 1 snack, and refillable mug per night of stay.

DDP-Disney Dining Plan with 1QS, 1TS (full service), 1 snack, and refillable mug per night of stay.

DxDDP-Disney Deluxe Dining Plan with 3TS or QS, 2 snacks, and refillable mug per night of stay

There is no substitution, no cutting down. You take whichever you choose as it is.
