If your last visit was in 2002, here are some attractions that may be new to you:
Mission: Space (Epcot) - Space flight simulator.
Mickey's Philharmagic (MK) - Wonderful new 3D show.
Tower of Terror (MGM) - New random drop sequences introduced in 2003.
Backlot Tour (MGM) - Updated show due to demolition of residential street.
Big City Street (MGM) - The NY Street facade at MGM is being updated to include scenery from a number of other US cities.
Wishes Nighttime Spectactular (MK) - New fireworks show debuted in Fall 2003.
Those are the major additions that come to mind. I probably forgot a few.
Stitch Encounter is a "reimagining" of the Alien Encounter attraction at the Magic Kingdom. AE closed about a year ago, and the facility is being re-worked into a similar attraction that features Stitch. The Grand Opening is scheduled for October 1, 2004, although "soft" openings may begin any time now.
I'm not certain about the date dex23 provided on the Stunt Show. I've always heard Fall 2005 for that one. The Stunt Show is a modified version of a similar attraction at the
Disneyland Paris theme park. It is a live show to be performed in an open-air theater under construction in the back corner of MGM Studios.
Soarin' is well under construction in the Land pavilion at Epcot. Food Rocks permanently closed to make way for Soarin'. With the 50th anniversary of Disneyland coming in May '05, I wouldn't be surprised to see Soarin' open right about that time.
The final new ride under construction is Expedition Everest at the Animal Kingdom. Think Splash Mountain with a rollercoaster inside. It's gonna be huge, and should be a huge draw for the Animal Kingdom. This one won't open until at least 2006.
