Any ideas for things to do?

We frequent Disney quite a bit. We do a few weekend vacations each year. Just this past week we went to stay in Ft. Wilderness, did a few things around there, and went to Downtown Disney. But we try to have one, big, week-long, the-whole-shabang, Disney trip per year. This year that will be towards the end of October. We are staying in the Pop and going to MNSSHP. We highly anticipate these trips and try to throw in some new things each year. We've never done MNSSHP before, so that will be new. But I was looking for some other "new" things to try. Keep in mind we will have a 3 year old and a 7 month old at the time. Here's our current schedule:

Wed the 24th: Check into the Pop in the afternoon, unload, hang out, dinner at Chef Mickey's that night to "kick off" the week

Thurs the 25th: need ideas for this day

Fri the 26th: Epcot all day long (we chose this day for Epcot since it have evening EMH that day)

Sat the 27th: need ideas for this day

Sun the 28th: Do things at the Pop, walk around and read all the signs, play in the arcade to earn tickets, swim, let the kids play in the fountains, get into costume around 3 PM to be at MK at 4 PM for MNSSHP

Mon the 29th: sleep in since we will be out late the night before, need ideas for the daytime, dinner at Whispering Canyon then take a bus over to Ft Wilderness for the 9:30 PM hayride

Tues the 30th: need ideas for daytime, dinner at DTD, and Trick or Treating at DTD that night

Wed the 31st: pack up, check out, and drive home

I listed "need ideas" in bold so they would be easy to find. We may possibly to Epcot another day. I have not been there in years and I know its a big place. So that could possibly take up another day, but I want to have a back-up plan just in case we dont want to do Epcot. As for other parks, I dont think we want to do them. We do MK all the time, and we will already be going to MNSSHP there. And we just did AK last year.

Does anyone have any ideas for some "new" stuff to do? We can find plenty of things to fill up our time, but I thought I would ask for some suggestions. Last time we went over to Coronado Springs and rented a surrey bike and played on the playground. And we rented the mini-motor boats at Ft Wilderness.
 
I would definitely break up Epcot into 2 days with little ones. We usually do Future World our first afternoon (everyone else is in the back of the park in the World Showcase by that time) and then we go to the WS at the end of the week as soon as it opens (around 11:00) while everyone else is in the front of the park.

This strategy has worked when we go in January but should work any time of the year.

Don't forget the Mini-Golf courses. I've heard they are really cute especially for preschoolers. A voucher was included with our package last year for one free round for our party.

Our kids LOVE DTD. That's always good for an afternoon. There's BBBoutique and the huge toy store.

Also, get on the monorail and ride it for a complete route. The kids think they're on a ride and you get to see the whole park.
