i would definetly recommend a firework cruise on a pontoon for illuminations (leaves from yacht club/beach club & boardwalk resorts) or wishes on a pontoon or the grand1 yacht (leaves from grand floridian or if requested polynesian, contemporary, wilderness lodge or ft. wilderness) the basic cost for a pontoon which seats 10 is $120 for the boatload & includes driver (available for both specialty cruises). there's also the grand1 yacht (wishes only) which seats 16 & costs $350/per hour & includes driver & deckhand on this 48 foot sea ray. you can also request food or dessert on board through the resort catering. call 407-824-2439 for the grand1 cruise and 407-wdw-play (939-7529) for other. me & my fiance did this for an illuminations cruise & ordered food through the yacht club on the breathless (only seats 7 though so wouldnt work for your group) & it was a night to remember. very magical!
i would also look into a magical gatherings event like a dessert party at epcot or mgm (prices vary, yourfairytale.com has some info listed or contact epcot catering). another mg event is a private animal safari at sunset with dinner (i believe $60/per adult & $30/per child) both very cool.
i would also recommend a wdw behind the scenes tour like the dolphins in depth at epcot where you learn about marine dolphins & even spend sometime with them in the water (meet & greet) this costed $150/each & included a tshirt & photo, we both really enjoyed the dolphin tour experience. there's also a handful of other tours too, to book a tour call 407-wdw-tour (939-8687)
