Any Good Ideas For Easter Dinner?

Now that I have started this weight loss plan, I realized that Easter could be a problem. I am sure that my family and guests don't want to eat what is on Dr. Phil's menu, so I will have to put that plan on hold for the day.

So what are you planning to prepare that is festive, nutritious, and will probably go over well with your guests? :confused3

--Ham. It's usually pretty low fat and calories.
--Fruit salad.
--Baked potatoes instead of mashed--you can offer butter and sour cream for those who want it and light sour cream or salsa for people watching their weight.
--You can keep green bean casserole pretty healthy if you use the 98% fat free soup and only put the fried onions on the top for flavor/crunch.
--Glazed Baby carrots. Take baby carrots and add about 1/2 cup frozen apple juice concentrate per pound. Add ginger (or any other spice you like) to taste and cook them on the stovetop until they're tender.
--Pillsbury makes frozen whole wheat rolls--you can offer white and wheat.
--We always have to have a Jello mold. There's almost no calories if you use the sugar-free jello.

Next Sunday will be a diet killer for me! Going to housemate's parents house and his mum always makes the best roast meals ever so it's impossible to resist!! Worst thing is I can't eat a roast unless it's swimming in gravy :( I think I'm just going to ignore the diet for 24hours and make sure I run a bit extra at the gym the next week! Any ideas for reducing the fat in gravy hugely appreciated folks!
 
Pearliq - That is a great menu! We usually have ham, deviled eggs, corn, mashed potatoes, bread, PIES, and some other side dishes that change from year to year. I forgot about jello, so we might do that, and I could do the fruit salad! :cheer2:

Queenie - I don't know of any ways to reduce the fat in gravy unless you make "fake gravy" out of the dry packets. ICK! :crazy: Just try to control the portion of the roast, I guess, and run an extra lap. :banana:
