I used touringplans.com last year. It is a paid service but it didn't let me down at all. Used it to plan each day, and then downloaded the mobile app for ride wait times while we were there. Worked like a charm!

If you look at touring plans' historical crowd pages, you can pick specific dates in the past and it will show each parks' hours, entertainment schedule, and the expected vs actual crowd levels. I believe this is part of the subscription, though.
