We're not supposed to have it that often due to DH's heart. We need to eat more chicken and fish, but DH doesn't like the smell of cooked fish in the house, so we only do fish in the summer on the grill. Therefore that means a LOT of chicken.

So I need lots of good chicken recipes! I got two turkey hams when Safeway had their big meat sale a few weeks ago, thinking it was a great alternative for DH. Then on Oprah one day this week there was a guy who's written a book about making healthier food choices, and one of his comparisons was:

regular bacon and eggs, or turkey bacon and eggs?

I was stunned when they said they both had the same amount of fat and cholesterol, but the sodium in the turkey bacon was through the roof! "And," the author added, "why would you want to turn a turkey into a pig?" Because we morons thought it would be healthier!!! :lmao:

:lmao: Wow - I really thought that the turkey was better for you - who knew!!!

I also bought chicken at the store - I found a recipe for these chicken fajita croissant things that I am going to try for the super bowl. Then I will make the rest of it in my chicken tortilla stew :cloud9:

Oooo, fajitas sound good, too. I saw a recipe for shredded chicken (tacos? enchiladas?) Anyway, it involved slow-cooking a whole chicken, then taking it out and using a fork to shred it off the bone. Then you add seasonings for the taco flavoring, and apparently it comes out really moist and yummy. Will have to try that sometime, it sounded really good.

I got navy beans, too, I was gonna try out a recipe for ham and bean soup. Actually, there were several recipes, I'm just trying to figure out which one to try. That was another reason I got the turkey ham, thinking the soup would be fairly healthy for DH.

That sounds yummy too! I sure don't sound like I ate dinner already :lmao:

What time is it there now? Are we two hours apart? You mentioned having eaten dinner, and it was like 4:00 here! :lmao:

I think it is an hour. It threw me off to - you had to pick your DS up from school and it was way later then that here :rotfl2:

It is 7:38 right now :hourglass

We don't do daylight savings - so 1/2 the time we are the same, 1/2 the time we are different - just don't ever ask me to figure out which is which :lmao:

Ok guys - my TiVo is about to boot me from live tv - so I am going to go watch a show with my nephew - I will check back later to see if anyone is around...

and if not have a wonderful night....or early evening for all you northwesterners!!! :rotfl:

Ah, so it's a two hour difference right now. Weird!

I am having my most bizarre meal ever: Leftover chicken phad thai, leftover chicken and rice (the kind made with Campbell's soup and dry onion soup mix), hummus and pita. The international meal! :rotfl2:

Hi, Melody!

Taking a break from all the cooking/sewing/crafting/Disneying? ;)

Same goes for ground turkey. Some brands have added fat and skin that boosts up the fat content to equal the higher fat variety of ground beef. Always check the label!

Something I do is to use smaller amounts of beef and stretch it with grains and vegetables. Lowers the fat content, increases the fiber, makes the meat stretch further. Less money spent on meat. :thumbsup2

I've been browsing thru Eating Well magazine online recipes. They have some great features on budget friendly healthy meals that I want to try out.
