Another option for vegetarians

Not sure if this was well know, but I thought I'd bring it up for the vegetarians I see posting on the boards at times.

We were talking to the chef at Carnation Cafe yesterday and he was telling us how to make the vegetable medley soup (my spouses favorite). You will be happy to know that the soup base does NOT contain either beef or chicken. It is a vegetable based soup made with vegetable stock.

There is no meat used in it whatsoever.

Hope that helps for another option for those that prefer that.

It's been there at least 4 years. That's when we started getting AP's and going so often. I think most people enjoy the baked potato soup, so that gets more "face time", haha. My husband enjoys both, but, the Vegetable Medley is his favorite.

I'm not a soup person, so I've never tried either, but he's been trying to figure out the base for years. He said it's very light and refreshing. We finally asked Oscar and he brought out the head chef to explain it to us. I may attempt to make it for him at home

I guess it's just basically taking any veggies you have on hand left over (such as tomatoes, and whatever else you have on hand he said would work), boiling them for a couple of hours to make the stock after straining. Then adding things like garbanzo beans, parsnips, shallots, carrots, celery, ect to the stock and cooking. Seems simple enough, but, I'll keep you posted on the results after I attempt it sometime, haha.

Oh good! That is a major issue with soups, and not an issue many waiters actually care about knowing. I think it's really cool that the chef came out to talk to you about it.
