If we choose to pick up our checked bags at MCO and then take them to the bus, can we get our bags off the bus when we arrive at the hotel, or must they be "magically" brought to our room later on?

Yes Just remember not to put the yellow tags on them or they might be pulled before you see them at baggage pick-up.

If you take them on the bus you have to take them off.
You can also leave with bell services if your room is not ready.
