another *how long can I keep it* thread :)

Sorry but y'all know alot about cooking and keeping food :)

So I made a HUGE casserole of yummy mac & cheese from scratch, on Saturday. It has milk in it but its been refrigerated and it still *looks* good.

I'm always very leery of keeping things too long, and probably throw them out before I could, so how long can we safely eat this?
 
I'd probably keep it for a week in the refrig. You could also divide into single sized portions and freeze.
 
Well, my father eats anything that hasn't grown legs and walked away on under it's own power :lmao:

However, I'm a bit more cautious. I wouldn't hesitate to eat mac & cheese that has been in the fridge up to a week.

hmm-starches go bad VERY quickly-its the ideal media for growing bacteria. In fact-commercial mayonaisse which is very high in acid and not bacteria friendly AT ALL frequently gets blamed for cases of food poisoning that are infact caused by potatoes or macaroni that has gone bad. ( My mother is a food scientist-and gets REALLY annoyed by this) I would say if you do not use or freeze it today its pretty much done for.
