We chose our 3 Fastpass+ selections for the days we will be at all four parks. Almost all of the times we were able to get are late afternoon or early evening times. Does this mean we can't get any other fastpasses for earlier in the day,and have to wait until we've used the last one in each park before we can get any others?

That means having to wait in standby lines during the busiest hours of the day? Oy vey.

you can adjust the times for each of your fastpasses individually after they are initially setup. You shouldn't have any trouble moving them up to early afternoon times (the most optimal times to have them, I think). The only ones I've seen with any kind of limited availability are Anna&Elsa and Seven Dwarves. I was able to move times around as late as one day before for rides like Toy Story and Soarin'.
