ANOTHER 180 + 10 question...

Sorry - I'm probably overthinking this, but I want to be absolutely sure I'm figuring this out right:
I want to try to schedule a Chef's Table dinner at V&A for a birthday dinner for my sister on 08/31/14.
What day should I start my stay at WDW in order to have the best shot at getting that ADR? If I'm looking at it correctly, I should check in on Aug 22, right?
In a related vein, we'll be doing a split stay - first 7 days on a rm only reservation, and last 3 days renting points via private owner at DVC. Hoping it won't screw up my ability to secure reservations for all 10 days...
Already have DVC stay pd for - now just want to make arrangements for the first part of our stay.

It is check-in + 10, so 11 days total.

We are going in August too, for 15 nights.

So, for example, I could make reservations from the 4th to the 14th at 180 days out from the 4th. Then, the next day (179 days from check-in) I could make reservations for the 15th.

We are not doing a split stay this year. In the past, it hasn't affected being able to make reservations.
