My family will be going to Universal for 2 nights at the Hard Rock, but I wasn't able to get an AP Rate. Is it still a good idea to get an AP, or should we just buy 3 day tickets?
 
Do you think there is any chance you’ll visit again within 12 months?

If not I would save the money and just get regular tickets. Without the hotel discount, and you are probably not staying long enough for the more costly passes to make sense for the food/merch discounts, I wouldn’t bother with a pass.

If you absolutely love it (and know you would have the opportunity to return) you can upgrade while you’re there.
 
We got a Club Level room, so I'm hoping we utilize that for breakfast and snacks, so that should save on buying food inside the parks. Plus we are renting a van, because we are heading to WDW for 5 days after, and didn't want have to deal with several uber/cab rides.
 
Still keep an eye out for AP rates; you never know what might pop up last minute! You can always upgrade 1 ticket to the AP should you happen to find a rate.

Otherwise, just get the cheapest option that meets your needs. No need to complicate things.
