If you are looking for it simply to safe time, it will not really do that. You still need to exchange the voucher, and that takes the same amount of time as purchasing the AP whether you have a voucher or not.
The main benefit of the AP voucher is that you are locking in the pricing. The vouchers never expire so you can buy them now for a trip in the future and not have to worry about Disney increasing the cost of APs before your trip date.
Since the AP voucher is pre-paid, I doubt Disney would give you back the cash difference.
You can apply the Give a Day to a DVC anual pass if you simply wait and purchase the pass at WDW, and not use a pre-paid AP voucher.

So you are speculating, simply visit the concierge at your DVC resort with the Give a Day voucher, flash your DVC member card, and there is a possibility of the double discount?
If the Give a Day voucher is rejected, you can still receive the dvc discount at the concierge desk.
