I am planning a trip in July and plan on getting AP during this trip. The grocery store by my house is selling 2 day park hoppers still at the old price. If I buy these and upgrade them will I have to pay the actual difference between what I paid and the price of an AP, or will it just register as a 2 day park hopper and get credited the money from the current price range?
 
You pay the difference in price between the price you paid for the park hoppers and the AP.
 
I’d buy the 2day discounted and hope for the best! Someone on here recently upgraded a discounted ticket and were given the value of a Disney ticket under the old pricing. So it was still discounted some.

If you have a target debit or credit card you can buy Disney gift cards there for 5% off to pay for the upgrade
 
If your upgrading to an annual pass my experience has been to buy a 5 day park hopper from LMTCLUB. I was given credit for what the pass would have cost buying from Disney. So I saved over $60.00 on my Annual Pass Upgrade.

The other thing to consider is if you buy a 3 to 5 day ticket you get one magic morning. You won't get that with the 2 day ticket.
