anniversary trip resort suggestions

I'll start off by saying I know that there are a lot of opinions out there, but I also know that the seasoned veterans of DIS usually make a few good points that I hadn't considered so here are the details:

DH, myself, and a 9mo old infant. May 22(Friday)-May 25(Monday). This is memorial day weekend. Flight would land at around 730ish on Friday night, ME to the resort. We are undecided about park days at this point (1 or 2 days?) but DH would really like to go to Epcot for a day and actually explore world showcase since the other times we've gone (with our 3 older kids) we haven't made it past the food carts. He would like to maybe see some of the performances, go INSIDE the pavilions, etc. Staying offsite isn't really an option because I'm not gate-checking a carseat or stressing about one in a cab/uber.

*I* would loooove to stay in a savannah view room, or at something like the poly/GF but that's pretty firmly out of the budget unless somehow those rooms could be $300ish/nt.

Reality says if we did 2 park days: Pop/AoA LM room or similar? (we have stayed at AoA 2x in suites and are aware of the differences between LM and the suits as well as the walking distance from the food court.)

If we did only ONE park day though the resort "matters" more.......that opens up a lot of options that don't know much about. We stayed at CBR for one night last spring, and at BCV for 2 nights (did a 3-split stay.) the post-April discounts will likely be released sometime the end of this week and I've been assuming around a 20% discount off the rack rates.

Thoughts or opinions? Things I'm overlooking?
 
Although AKL SV is one of my favorites, for such a short trip I'd want to be closer to the action. I'd look into BW, BC, or YC if your budget allows. Also, there are the Swan and Dolphin in the same area.
 
Since you’ve been to AofA already, stay at Pop. Then you can go to the parks for two days and you’ll have the option of taking the Skyliner which leads you into world showcase at Epcot and that’s where your husband wants to be. :)

You could always do MK and split the next and do World Showcase and then rest that afternoon. Could always see about renting DVC points for stays at the Poly to keep costs down and still be at a DR.
 

I would vote for BW, BC or YC. If it's a short trip and EP is one of your primary parks, one of these offers the most convenient location. Also, with a 9 mo old, it will be really nice to be able to just walk to the park with the stroller instead of having to pack it up on a bus. If you need to go back to the room mid-day, it's really nice to just be able to walk back instead of having to wait for transportation.

There is also min-golf that you can walk to from this area. The restaurants at Swan/Dolphin are also close, so you can check those out if you are looking for some additional variety.

FYI...
If you are interested in renting points from a DVC member the only resort in the DVC world that has open dates for Memorial Day Weekend is the preferred studio at Saratoga Springs and that is going for 53 points for a Fri, Sat, Sun night ressie.
 
If a deluxe resort is out of the price range, you may want to check out the Gran Destino Tower at CSR. It's the nicest, newest moderate on property IOO.
