Anniversary Trip, need suggestions!

My husband and I are headed to WDW for our 10th anniversary, without the kids. This will be our first trip without them and I feel like I have no idea where to start with restaurants!! We have always focused on fun restaurants for the kids, so don't know what would be fun for us. We are staying at CR and will have PH tickets. Any help is appreciated!!
 
We haven't eaten at any of the signature restaurants, so I may not be quite as helpful as some people. We've the only TS restaurants we've done at the resorts are Whispering Canyon Cafe and Big River Grille, and neither of those really scream "childless anniversary trip" to me. Out of the places we've eaten in the parks, I would recommend Be Our Guest (the atmosphere is spectacular, but I'd recommend eating in the West Wing or the Rose Gallery, which are much quieter than the Ballroom) at MK. At Epcot, we really enjoyed Les Chefs de France (though it can be noisy as well, and feels a bit cramped at times), but a friend of mine REALLY loved Monsieur Paul and said it was a more relaxing experience. My top recommendation is Coral Reef, though I know a lot of people don't like it. We had excellent food and excellent service when we were there, and the dining room itself is incredibly romantic; we went at an off time, and there were only a couple of kids, and the experience was much quieter than we expected.

I would totally do California grill one night for fireworks and you're right there.
 

We went for our 10th anniversary last year. We ate at the Boathouse, 'Ohana, Via Napoli and La Hacienda de San Angel. We're not signature people overall. The Boathouse was great for excellent food in a casual environment. I always schedule CG and then cancel it later. I personally just can't justify the cost. I don't judge anyone that does, I'm sure it's awesome, I just can't do with so many other choices I know we will enjoy. We loved breakfast at The Wave, too.
 
Thanks all, these are great suggestions!! I forgot to mention that we are on DDP, so trying not to go crazy with signature restaurants...maybe just 1.
 
Jiko at Animal Kingdom Lodge is amazing!
Katsura Grill in Japan at Epcot is a great lunch spot it's QS (my son would never let us go there so we always go when he is not with us lol.)
 
Do you two enjoy a libation ? If so, don't forget the wonderful little lounges all around. Crew's cup at the Yacht Club is a nice place. Territory lounge also works. The thing my wife and I like about the lounges is it is all adults. We love our kids and now our little grandtinker, but when we go by ourselves we see cute kids all day, just prefer to not eat every meal with them.

I know you said not too many sig's, but a table on the water at the Boathouse, whether it be lunch or dinner is a wonderful scenic meal.
 
My husband and I are celebrating our 10 year anniversary at Disney next week! We love the signature fine dining restaurants! Our #1 favorite is California Grill (try to book a dining time 90-120 minutes before fireworks and enjoy the show! They pipe in the music and you can watch from your table or a viewing deck outside). I believe it requires 2 dining credits per person to eat there on the DDP. This one always top the list for us and we have eaten at Citricos, Morimoto, Narcoosee's, Shulas, Jiko, Hollywood Brown Derby, Le Cellier, and Victoria & Albert's. We plan to try Flying Fish, Tiffins, and Artist Point next week which we have heard great things about. If you are only doing 1 place, I definitely vote California Grill. It is a must for us on every trip.
