As kastoney says, it's difficult to go wrong with any Signature (though there are a couple I'd avoid). There will be options for less adventurous palates at any of them that would likely work. Check out the menus at the ones which sound most appealing, and let those be your guide. Here are my quick thoughts on a few:
Victoria & Albert's - I only list this one because it's the top restaurant on property, and second isn't close. However, it does require a fairly open mind re: the menu and is exorbitantly priced.
Artist Point - One of the (if not THE) most romantic restaurants on property. Good food, good service, exceptional ambiance. A great treat is to walk around the grounds after dinner hand-in-hand.
Jiko - Also lovely, full of mood and ambiance, and has great food and service, as well.
CA Grill - Boisterous but has the cachet of being able to see the MK fireworks. More expensive than most, but a fun location. Not a place to go if you want to have quiet conversation.
The Boathouse - Fun, inviting decor--you can even sit out on the deck, weather permitting. Food is good with plenty of options, and then you have the whole of Disney Springs to explore later.
Morimoto Asia - Some dishes are great; others pedestrian. Still, it has stylized decor that's modern and comfortable. Service is solid. Again, DS is at your beck and call after dinner.
Il Mulino - Perhaps the best Italian on property. Offers small plates which is convenient. Warm decor and ambiance, good service.
