Hi everyone -

I am just wondering if you can help me. My daughters dedication is this Sunday and we are having a brunch. I would like to make ambrosia and strawberry soup (from 1900 Park Fare in the Grand Floridian) and I don't knw what the ingredients are or how to make them.

Also, please let me know if this menu sounds good. We are having about 40-50 people and our celebration is going to be right after church so I really cannot make anything after church it all has to be prepared the day before.

French Toast Bake with Syrup
Assorted Bagels and Cream Cheese
Chees and Crackers with Fruit (Strawberries, blueberries, grapes, raspberries and blackberries)
Omlet
Ham
Assorted Danish
Mini Muffins


I need some other ideas - more on the lunch side. Please toss out some ideas.

Strawberry Soup
from the Grand Floridian

2½ lb strawberries (frozen variety, thaw with juice)
1 lb Heavy Cream
2 oz Sour Cream
3 oz Yogurt
½ lb Fresh Strawberries

Mix strawberries, heavy cream, sour cream and yogurt. Beat slowly until well mixed and a smooth consistency. Chill; shake well before serving. Add fresh strawberry halves as garnish.

I have multiple recipes/variations for ambrosia, but none from WDW. Here's the basic version, but I've also seen them include walnuts & sliced banana. Essentially, it's up to you what you include. One recipe has 2 Tbl mayo, 1 Tbl 10x sugar & ¼ tsp grated orange rind added to the whipped topping. Another uses 8 oz sour cream instead of whipped topping.

Ambrosia Fruit Salad
Makes 6 to 10 servings


8 oz frozen whipped topping, thawed
2½ c shredded coconut
½ c chopped walnuts
8 oz fruit cocktail, drained
8 oz pineapple chunks, drained
11 oz mandarin oranges, drained
3 c miniature marshmallows
10 oz maraschino cherries, drained (optional)
1 tsp ground nutmeg
1 tsp ground cinnamon

Directions
In a large bowl, combine the whipped topping, coconut, chopped nuts, fruit cocktail, pineapple, mandarin oranges, marshmallows, cherries, nutmeg and cinnamon. Mix together well and refrigerate for 30 to 45 minutes.
