Amanda's Menu Planning Spectacular!

Good Morning ladies! Last night DH and I got a wild hair and began organizing our spare bedroom. We threw out so much junk and I finally got the courage to give some items away to the Salvation Army. The guest bedroom looks so much nicer now. My next project is the office closet - and then......the basement. Hopefully it will all be done by April and then my Mom and I are going to have a big garage sale. So that I can get some money to buy paint for the office. The guest bedroom will have to wait awhile..........I have a plan for it but it is my secret :rolleyes1

Tonight we are going to an Irish Pub with some friends. I'll be enjoying Potato Soup with Fish and Chips this evening. There is about 3" of snow on the ground so it is the perfect weather for it :cold: .

Plan for the rest of the day:
B: 2 cups of coffee
L: Not sure yet - I've got all sorts of food in the house - it will be low carb I can tell ya that.
D: With friends
S: The one girl is bringing Chocolate cookies - I will be good!
Exercise - I skipped Curves to stay in bed with hubby :love2:

Hi Amanda--Congrats on a 3.3 lb. loss. If you keep that up, you will be in size 10 in no time. I think it's really more important that you are taking measurements, especially since you are doing weights at Curves. I'm so impressed that you and your husband organized your spare bedroom, and I'm very curious about what you're planning to do with it. Hmmmmm.

Cleaning out & organizing the rooms - I love that, sounds fun! great to do on these cold weather days.

Do you do crockpot recipes? I made a great lc mexican chicken in the cp yesterday - very easy & yummy :tongue: where is you chicken ala amanda recipe?

You are really doing great. Congrats on the lbs gone. My husband loves to organize, I hate it. At least one of us likes it. Hmmm, what do you have planned for that other room? WOO HOO!!! :Pinkbounc :Pinkbounc :Pinkbounc 3.3 pounds gone - buh bye!! :wave2: Great work, Amanda!! I just KNOW it's from all those great Curves workouts and from your awesome menu planning.

I have 2 days of 7 designated as leftovers or fend for yourselves dinners. Maybe that would help you in your planning? I also have set up my menu planning this way - Monday is leftovers, Tuesday is chicken, Wednesday is Crock-pot or casserole, Thursday is leftovers, Friday is burgers or tacos or (gasp!) pizza - fun food, Saturday is cook's choice, and Sunday is for a big meal like a roast or a ham or a turkey with all the trimmings. Just thought I'd share.

Is your surprise anything like your neighbor Susan's "surprise?". :confused3 :goodvibes You can't blame a girl for being curious! :blush: I'm sure you'll tell us when you're ready. I'll try really hard to be patient. ::yes::

Hi Everyone! Thanks for all stopping by - makes me smile in the morning :flower: .

This weekend was pretty much a bust - to many dinners out in resturants instead of at home. I need to refresh my menu options this week. I don't think I am good at planning 2 weeks worth of menus - I need to stick to doing it every week. YES it means twice the grocery shopping but that is okay. I'll work on the new menu tonight when I get home and can see what is in front of me.

Plan for today:
B: Skipped it :(
L: Nacho Chicken and broccoli
S: Celery Sticks and veggie dip
D: We are going over to a friends house tonight for dinner - more then likely pizza. I am going to eat a low carb meal before we go so that I only eat maybe a slice of pizza.
Curves: Right after work
Water - Drink!

I want to hit some journals before "work" sets in.

I tried the eat before going over my MIL's house yesterday. It worked out very well for me. She always has so many carbs and high fat foods, I knew it wouldn't be any good for me. I had a nice salad with chicken before going over there. :teeth: Much better for me than what she had.

Hey, Amanda, how did yesterday go? Did you get your menus planned? You know I love to hear about it, so give it up, girl. What'cha eating this week?

Amanda, when you went to Curves, how much did it cost to sign up? You've probably been over this before, but do you mind telling me the $? Did you have a sign up fee? A monthly plan or a longer commitment? What about insurance. . .do you know if they take $ from an HMO? Thanks for any info you can give me. There are 2 Curves within 5 minutes from my door, and 1 in the town I work in. I'm sure they're nicer than MYB (My Yukky Ballys). ;)

Good Morning! Yesterday went very well. I had 2 slices of pizza at my friends house but I did really good the rest of the day so I am not going to sweat the small stuff. I also got in a good workout at Curves before hand. Recap for yesterday:

D: Small Taco Salad and 2 slices of Pizza

Every time I read about Nacho Chicken it makes me grin - reminds me of a joke about "what do you call chicken that belongs to someone else?" :teeth:

I was just catching up with your journal after being out of town (we missed the snow! Yeah! :cheer2: ) CONGRATS on your 3.3 pound loss!! That's wonderful!!! I think all of your meal planning and Curving is paying off!

Busy busy busy... you must love nacho chicken :teeth: is this the same as chicken ala amanda? the workouts really help, how is curves? is that
for women only? i see Erin may be checking it out.

I improvised with a recipe in a lc cookbook & it came out yummy. not sure about total carb count, I estimated mine at 18, mine was 2 servings, it was so yummy no leftovers ;)
Salsa on bottom of crockpot, bite size fresh chicken pieces are next. In a bowl mix 1cup cottage cheese, 1/2 cup shredded mexican cheese & chopped scallions, layer this on top of chicken. Pour additional salsa on top & sprinkle some mexican cheese. Cook for 4 hours on low. Oh I added sliced mushrooms too.

Meme- Nacho chicken is not Chicken Ala Amanda. Nacho Chicken is 4 frozen chicken breast in a crockpot, pour on jar of Chili Con Queso over and add one cup water - cook on low for 8 hours. Serve with veggies. YUMMY! Curves is for women only! And I really do enjoy it.

Yesterday was not a good day here is the recap:
B: Protein Shake
L: Cheeseburger (no Bun)
S: half of a chocolate chocolate cookie and a mini dairy queen oreo blizzard - work provided
D: My business dinner - when drinks are paid for you take advantage ;) I had 3 Cosmopolitans, some carribean scallops, some chicken strips, and some artichoke dip. There was not much food. When I came home DH could see the effects of not enough food with plenty of drinks so he went and got me Burger King. Breaded Chicken Sandwich and Coke. But I felt fine this morning!

Plan for Today:
B: Protein Shake
L: Either Nacho Chicken, Tuna Salad, or bunless Cheeseburger
S: Celery sticks and Veggie Dip
D: I have some chicken breast that I think I am going to broil with seasonings. Something simple - and I might get out the new food processor and make some Cauliflower rice.
Exercise: Curves after work
Water: 6 glasses is my goal
Vitamins - taking them now.

More then likely I will NOT see a loss in weight this week - I've made to many bad choices on Monday and Tuesday. I do think I will see a gain either since I have been continuing my workouts. My plan at the moment is to go tonight, Friday, and Saturday. That will be 4 workouts this week.

January - my goals were to work out 16 days - I made it 13 - I know I missed 2 days due to my foot after the marathon. I did however work out 555 minutes in January, this includes the half marathon. My goal was also to lose 5 lbs - I lost 3.3 lbs.

February Goals
Exercise - 16 days
Weight - Lose 5 lbs - will put stats at 166.8/158.3/140
Food - conitnue menu planning.

I know you're thinking you'll stay the same this week, but sometimes, maintaining is quite an accomplishment! Your hard work IS paying off! I think your stats for January look great and your goals for February are definitely achievable! :cheer2:

The Nacho Chicken recipe sounds yummy and easy! May have to give that one a try!

Make sure you get extra water today - don't want all that alcohol to leave you dehydrated. If I had 3 of any drink, I'd be passed out on the floor! :p Bravo to DH for taking good care of you when you got home and making sure you got some solid food! :love:
