Am I overthinking things

So my wife and I are going to WDW at the end of February and I am also making myself crazy with the planning. Our trip is from 2/25 to 3/2. We are staying at French Quarter and are planning on going to MK and Epcot the two days we go to the parks. Our plan sounds crazy but we are hitting the Daytona 500 on Sunday driving to Sarasota to go to this Pinecraft (monday) which is some Amish snow bird community dropping our rental car off on Monday at the airport and then taking the disney bus to our resort. We arent hitting the parks until Tuesday and Wednesday. So my question is this. One of the places that I want to go is Toothsome at Universal on Monday night before we drop off our rental car.

So my questions are this...
#1 Is toothsome worth it or is there something comparable at Disney Springs..
#2 Is it true what they say about Disney Transportation if we get to the airport at like 9:00 will our luggage make it to the resort with us. ( I have heard rumors )
#3 How bad will the drive from Sarasota be
#4 How important are reservations at the parks and at DS.

#1 - Toothsome was good, especially the drinks, but thing Cheesecake Factory. If you have one of those close it may not be worth all the hassle not that it is really a hassle if it is a non-park day.

#2 - Since you aren't flying when you use the bus your luggage will be with you and go under the bus. It will always stay with you on that bus. Long delays happen when luggage is pulled before it even makes it to the luggage carousel at the airport by Disney and taken in a separate truck from MDE.

#3- No clue never done it.

#4 - If you want to eat somewhere book the reservation. There are many restaurants that are probably already booked up since you are with in 180 days. If you are flexible and not picky getting a reservation for 2 is not hard but you may not eat exactly where you wanted or at a time you are use to.

Thanks My wife doesn't understand how much planning is involved in a place like disney... She refers to Florida as the F-word... I know what you mean about restaurants because BOG is already booked up... I am thinking I should just book the stuff and be done with it... I have watched so many videos its ridiculous.

I am a planner to a point so if I know I'm going on vacation some where and there is a restaurant I really want to eat at I try to book the reservation as soon as they let me. That can be at Disney, Las Vegas, or the middle of no where America. I figure if they are offering it and it is somewhere that tends to be full (or is highly talked about) I would rather know I'm getting to experience it with no hassles once vacation starts.
 

You can always try calling again for reservations at BOG.

I'm a planner too. Have a friend who thinks I'm nutty for mapping it out, but I love having a plan and still being flexible. And since your stay in WDW is so short, reservations will help you make the most of your time, without having to wait for a table (like knowing you can get in a 45 min line for a ride because your dining reservation is 90 mins out).
 
I got the wife to agree to pick out restaurants lol I told her the next time I bug her will be for input on fast passes and what she wants to ride....

In July, I drove from Disney to Sanibel which is further south than Sarasota and the ride was very simple. I think it took me just over 3 hours.

Yeah I figured as much... I dont think we will be spending too much time in Pinecraft (maybe until 3:00) since we have reservations at 8:15 at Paradiso 37.
