Am I Crazy? (Soy Allergy Question)

Hi, everyone! This will be our first trip with my newly diagnosed food allergies. Two places that we visit every trip are 'Ohana and Yak and Yeti. I know WDW is good about allergies and I've been doing all my research, plan to talk to special diets (I have a list of about 7 things I need to avoid), etc but I am wondering if I am just setting myself up for disappointment by booking ADRs at "Asian Flare" type places? I seem to have no issues with my offending foods being near me- it is just when I digest them. My reactions so far are not anaphylactic. So... Anyone have any advice/thoughts?

Just to give a bit more info, I am unable to have dairy, gluten, peanut, soy, egg, mushrooms, whole corn (corn dirivitives seem to be ok), and I try to avoid garlic when possible.
