Am I crazy? AK with AM EMH but not staying on site

When? If it's before June then no worries. With the postponement of all the evening activities, I don't think there's going to be huge crowds then. Just realize that the queues will have already filled by 9:00, so you won't find any really short standby lines. It will be busy, so use a touring plan and choose your FPs wisely. If you like the AK, that's fine. You don't have to choose the most popular park. I like the AK, wouldn't place it first but you're not crazy if that is your interest.

One other question, should I keep my 8:05am Tusker House or just do early lunch instead?

No, you're not crazy. I have not found the lines that long at 9 even when going in at 8 for EMH. Do you have a ticket that you can schedule some FP? Remember EE has a single rider line. I can't answer the breakfast question, but if you want to eat then, why not?

Remember you can enter DAK at the Rainforest Cafe tapstile,so that may put you a little ahead of most of the maingate line at opening.

I think as long as you fp the safari you'd be fine. I don't see the other things having long lines at 9
