Is there a compromise that could be made? If your DH needs certain food items that aren't allowed could he put them in a separate cooler (eat on separate plates?...separate times?...separate tables?) for the two days that the vacation overlaps the holiday?

However, it sounds like renting another place is not an option for you? That's a shame. In your situation, I would absolutely plan to eat your meals out on the days that your SIL is observing Passover. Just let them know up front that this is what you plan to do so that there are no surprised hurt feelings on the trip. I would have a hard time avoiding all of the items you mentioned, particularly if I didn't eat meat. Some of the "compromise" meals mentioned earlier sound completely disgusting. I think that some nice meals out on the tail end of your vacation sound like the perfect solution.
