I'm trying it for the first time. My brine is chilling. I'm skeptical about the times, too. He says to roast it at 500 for 30 minutes. Then you drop the temperature to 350. Then he says the total roasting time should be 2 to 2-1/2 hours. So, that includes the 30 minutes at 500? It sounds really short. But then again, I guess 30 minutes at 500 would really jump start things. Should I plan for about 2 hours from the time the turkey goes into the oven?

(My turkey is just under 14 pounds.)
