ok confess how many of you are making his turkey this year. It sounds like alot of us are. I'm probably going to break his rules by stuffing the turkey too. When will you start brining?
 
We've been making AB's brined turkey for 5 or 6 years now. It NEVER fails.

DH will make the brine when he gets home from work this afternoon, and the turkey will go for a dip, probably around 6 or 7 tonight. We'll soak it overnight, and it'll be ready to go on the grill tomorrow morning.
 
i'm also leaving out the cinnamon and allspice because I don't care for those in savory foods.
 

I nearly bought a kosher turkey breast, 'cause they are already "brined"...but it was $$$$$ :eek:

The ones I bought are still thawing and I probably won't brine them, but I use most of his other tips for cooking, and they've always worked for me.

I love Alton Brown...he makes me laugh!!
 
I'll be brining this evening. I don't know that I'll use all his ingredients, and we're not deep frying, but I can't wait to try it.
 
I love Alton (I have a bit of a crush on him - food and science? all at once! :blush: ) but I don't know his brine technique!

Did the roasted brined one last year. Doing the honey brine-smoked on the grill turkey this year with his garlic mashed potatoes recipe. Can not even wait.!!! :goodvibes

Do you do the 500 degrees first and only 2 to 2 1/2 hours total roasting time? Does that really work? Does the skin come out golden, crispy and delicious? Really?
 
I don't brine it but I do follow his directions for cooking/roasting. I have for the last few years. Have had the best turkeys ever! Make sure you make the foil cover before you put it in and do the high heat to begin and then turn it down.

The first 2 years the biggest problem was that the turkey was done WAY before I thought it would be (I was skeptical about his times!) and had to sit while I raced to finish everything else!
 
Were I to make a turkey and host thanksgiving...

I'm trying it for the first time. My brine is chilling. I'm skeptical about the times, too. He says to roast it at 500 for 30 minutes. Then you drop the temperature to 350. Then he says the total roasting time should be 2 to 2-1/2 hours. So, that includes the 30 minutes at 500? It sounds really short. But then again, I guess 30 minutes at 500 would really jump start things. Should I plan for about 2 hours from the time the turkey goes into the oven? :confused3 (My turkey is just under 14 pounds.)

I decided to go for it. My brine is chilling now. This is my first time with this method too. Mine is also a little over 12 lbs. I'm going to aim for 2 hrs 15 minutes total time, so 30min. at 500 and then 1.75 hrs at 350, and I'll take it out sooner if it's ready. Good luck!
