the only place i know that could be a problem for that is the Crystal Palace.
It is unusual for such a long wait, but not impossible. I waited over an hour to be seated at California Grill. The circumstances were unusual, and the manager did his best to accommodate our pains (although he fell short of solving the problem, which was in reach), but the experience was unacceptable. The root cause was that we had a large party. For folks with parties over the size of one table (we were 10) who are looking for a Signature experience, I'd steer clear of CG if the parks are of average crowding or more and plan on a place like Narcoossee's or Citricos which are less factory oriented. This is unfortunate, because the food and service otherwise were awesome.
With regard to the question at hand, we have had great experiences at both restaurants. I agree with the poster who said that Yachtsman has some more exotic flavors. Not all of their steaks are Mesquite smoked, but they do use an oak-fired grill. Their cuts are dry aged and may provide a nuttier beefy flavor that some folks don't like. The service there was, in my opinion, excellent, but stuffy.
The comparison of Le Cellier to an Outback is a bit specious -- the quality of beef at Le Cellier is much higher. And the times we've been there, we have had outstanding service. It is a great place to eat and we try to go there every trip. My love for Le Cellier, however, is also nostalgic - it was my first meal in the World on my first trip (when I was 23).
We do not dine on any of the Plans - we use Tables in Wonderland discounting. If you are dining this way, the cost difference between the two is not as magnified. That being said, there are many financial distractions at Yachtsman - expensive wines, exotic appetizers, and expensive desserts that can amplify what appears to be a small difference in the cost of an entree. You may think you'll be able to resist - but people who want big steaks are not known for their restraint.
These restaurants are different - and both worth a visit. The hype factor of Le Cellier may sometimes set expectations too high for what it is. That is unfortunate, because it is a neat place to eat.
