All I know is Disney with KIDS.. help!

I took my sweet 5 year old princess to Disney World with my mom last October and did the full week, all the parks, character meals.. it was definitely the ultimate GIRLS week doing all the princess meals and meeting everyone. It was great and we had a blast and i LOVED seeing it through her eyes for the first time! I would take her again in a heartbeat!

Now just my mom (who is younger at heart than I am!) and I are going for a long weekend for my birthday at the end of Feb and I'm really excited, but kind of clueless as to where to start! We're going to do HS and MK each one day, but aside from that we probably wont do the other parks. She won't even ride Dumbo, much less thunder mountain or tower of terror or anything like that. We're all about fun shows and just the general disney magic.

I'd like to do maybe one real nice ADR, and it would be great if we could see the fireworks from dinner! Any of the resorts have something like this? I didn't look into anything like this last time since it was more about doing stuff the 5 year old would enjoy.

Also we were planning to explore downtown disney, but i know nothing about it! Anything I should be sure not to miss? Best place to eat? Shows to see? We're renting a car and staying offsite (we have a timeshare with marriott) so maybe do the outlets one day? Is universal worth going to? We're both big time Harry Potter fans, but I know its not open yet. It would still be fun to get a little glimpse of it though! :0)

I'd like to have a general idea of fun stuff to do before we go, although I don't want to have every day "planned out" like I did last time. We had a bunch of ADRs and parks assigned to specific days so we wouldnt miss ANYthing.. but this time we're looking forward to it being a little more relaxed and go with the flow :0) Thanks for your help!
 
I know the Cali Grill at the Contemporary you can see the fireworks at MK.

As far as Downtown Disney, the only place we ever seem to eat there is at the icky McDonalds but I hear Wolfgang Pucks is good and Earl of Sandwich are good.

If you dig around this site, I seem to remember a map of Downtown Disney somewhere and it listed all the stores in the area. It's a wonderful place to spend an evening. I did it solo last year!

I bet you could google Downtown Disney and find what you want to know too.
 
When we took my wife's mother, she really enjoyed visiting the different resorts.
from the MK, you can get to the Contemporary, the Polynesian and the Grand Floridian via the Monorail-Resort line; and Wilderness Lodge by boat. They all have great Dining facilities to choose from and unique shops. From EPCOT, its a short walk to to the Boardwalk Resort, and to the Beach Club/ Yacht Club.

Whatever you choose to do, just enjoy your MOM.
