I like to see the parade from in front of the Island mercentile shop on Discovery Island. You see it with the Tree of Life in the background and when the parade is over, you're right near the exit of the park.

This parade ends where it begins so if you don't want crowds watch it close to the Flights of wonder show. Most people line up for the start of the parade and then try to exit the park, meaning huge crowds. Also close to the Flights of wonder you will find shade which can be a problem if you are towards the start of the parade.
