Check out the closing times for attractions especially the paths & animal areas. They close earlier than the park does.

Ride the safari at night. My mom thought I was crazy too, but afterwards she admitted she was amazed by how many animals we saw plus it wasn't really as "dark" as you think. It's a different experience & neat the see the animals in a different setting (usually we ride in the mornings before the heat).

Walk thru Pandora. It's another totally different experience at night. Especially if you walk along the path from the safari over to there (not the entrance from the tree). The noises & night time is cool.

So if you can't see anything, why ride the safari??

I didn't feel like I couldn't see for the most part, except in the water areas. Those were pretty dark. Though your eyes adjust to the darkness. We saw the lions playing and heard them roar. This was our fifth trip to WDW with many safari rides and this was the first time we'd seen them do more than lay around or slowly pace. There were animals right next to the vehicle as well. Many were far more active than during the day.
