They can see/figure out what you're checking for. Example: After browsing a website for a backpack but didn't purchase yet, I received email from them thanking me for my interest in the backpack. Has happened to me many times.

True, but does this affect the prices they will be posting?
 
Not sure. Before I started clearing browsing history, I was looking for airfare and, of course, it was high and I checked all the time, several times a day. Then I after I cleared browsing history, I was able to get airfare for $407 that was previously $650. Whether it had anything to do with what I did...I don't know. But I'll do it for now on.
 
Its called the 'abandoned shopping cart pricing technique'. Clear your browser. There's also a technique online retailers use called, 'fluctuating pricing', driven by how popular a particular product is, online retailers can change the price on the fly. So if a route to Orlando is getting lots of interest, they know that instantly.
 

I cleared browser history, used different browser where I had never logged in, and even tried a different machine. None of this changed anything on SWA. However, they did offer more WGA fares on the flight I really wanted and so we booked because that was the lowest fare I had ever seen for that leg. The return was a bit more expensive but we are dealing with Sunday flights because our WDW ressies are not flexible (no availability on either end of our dates).
