Aging your own Italian meats?

So I have a question for everyone! My dad was telling us that his grandfather used to age his own Italian lunch meats in his garage back in the day when my dad was a kid.

I think that this would be a great hobby for my dad and he'd have a blast doing it. And his birthday is coming up soon!

Does anyone know of any books or starter kits for aging your own meats?? I have no idea where to start!

Yeah, you're right.. it would be a great theme!!! They have so many unnecessary shows these days.. I'd love to see them do a show on sausage making and meat aging (haha, that sounds funny!). I can't find much through Google other than some recipes, but I was hoping to find a book of some sort. Maybe I'll just go to Borders and see if they can help me there. But if anyone here has a family member who does this, or maybe does it themselves, I'd love to hear from them!

You know, I know people who can their own tomatoes, make their own pasta, and everyone makes their own sauce, but I don't know anyone who does their own meats (although the local delis do).
