Planning again, after a long break

My family will be on the 3 day cruise Oct 13th after 10 days in WDW.
I understand that if I do not want to give up experiencing one of the 3 main restaurants on a 3 day cruise, I will either need to skip Palo or double dip. Double dipping sounds good to me but we have the late dinner seating
If I choose to double dip will I be giving up seeing one of the main shows? I think if the answer is yes, I may have to skip Palo
I think I read somewhere that the shows are also shown during the day... can anyone confirm?
Also, is brunch not available on the 3 day cruise? Are there no other ways to experience Palo without doing a dinner?
