Advise needed re: November dates

On our last WDW trip we traveled the last full week before Thanksgiving (Saturday to Saturday) and vowed we would always travel that week because the weather and low crowds were ideal. But flights are limited on Saturdays and I'm not finding any reasonable fares at good times. So we are considering traveling from Tuesday to Tuesday (Nov 8-15). There are plenty of reasonably timed and priced flights for those dates. Does anyone have any insight, however, on how different the crowd levels would be? Is the second week of November vastly different from the third?
