Advice needed for xmas trip 2012

Hi, any advice anyone could give for a xmas trip would be appreciated, it just be me and dh, we want to stay off site and try and fit in as many parks and attractions as possible in 7 or 10 days, maybe including new years eve somewhere.
Any hotel suggestions would be cool as well.
