So, my initial thought was “definitely Riviera!”
(I think I’ve stayed there every November since it opened & I love it!!
)
However, upon further reflection, I think I’d pick VGF, Poly, CCV or AKV for a resort-only,
no-parks, adult trip.
(My Nov trips are usually pretty Epcot heavy & that’s what makes Riviera work for me- otherwise, I can tire of their food options quickly since I’ve got celiac disease & that limits my options a lot!)
VGF & Poly have beautiful grounds, great pools, several wonderful food options on property, plus easy access to the other monorail resort restaurants. Added bonus that you can watch MK’s fireworks every night

& have easy access to Dole Whips

CCV & AKV have more serene vibes with excellent restaurants on-site (AKV’s TS is arguably better… and there’s a savanna, which I could watch for hours!! But WL food is really good too, I love their quiet pool, it’s by a lake, & there’s more room to explore outside than at AKL).
I would consider SSR for its proximity to DS, but I’m personally not a fan of the resort itself, so I’d probably choose one of the other resorts mentioned first. & I probably would
not stay at some of my favorite park-heavy trip resorts, like BCV or BLT.
