I know most of the time all adults in the party (stateroom?) have to present themselves at the check in desk together to have ID and documents checked. What happens if the party is traveling separately? Most are there early, but the last one or two will get there late. Will they make everyone wait? or can the first people go aboard for lunch & everyone meet up later? (of course the later people would have their own documents on them)

I don't see why you won't be able to check in separately... Maybe Barb & Tony can answer your question better, but as long as they have all of their documents and ID's, you should be able to check in when you get there and when the rest should be able to check in when they get there..

I believe the rule is that all adults in a stateroom must check in together. If your party has multiple rooms, each room can check in by itself. If people occupying the same stateroom are arriving separately, I'm not sure how DCL handles it....but it seems logical that each can check in when he/she arrives. I'd call DCL on this one.....
