Adult Excursions on Eastern

What excersions do you all recommend for adults going without children on the Eastern? My mom will be with DH and I for those of you that are thinking of very adult things.

You can go to the beach, Orient is very popular, on St. Maarten or do a 12 metre regatta. You can take an island tour.

St. Thomas there is the Paradise Point Tram, another island tour, Kon Tiki party barge.

Lots of stuff to do, but what are you interests? Is Mom capable of doing everything you can or do you need lighter activities for her? Do you want relaxing or high energy? We need a little more info.
