So, I'm planning a solo trip but a friend may be joining me. The friend won't know until within 90 days of the trip. Since we'll be on the dining plan, I was planning to go ahead and book reservations at 180 + 10 (primarily because Be Our Guest, 'Ohana, and Tusker House are on our list). Should I book for a party of 2 knowing that it may be only me or book for a party of 1 and then show up with 2?

Definitely 2! Sometimes they can add a person that day and sometimes they can't. If you show up as just 1 on a 2-person reservation, there is no penalty or no-show charge for the extra person. Better safe than sorry!

Thanks I wasn't sure with the new cc guarantee if I'd be penalized if it was only one person. If there's no penalty I'll definitely make them for 2.

The no show penalty is only enforced if no one shows up to honor the ADR. So as long as someone shows up, you won't be charged the no show fee for the guests that were unable to make the ADR. In your case, I would definitely make the ADR for 2. It's almost always easier to show up with less guests than it is to try and add guests at the podium. While most odd sized parties will be seated at the next even sized table, there may not always be the case (although, I haven't heard of many tables for one - except perhaps at places with seating along a bar, e.g., Flying Fish). Also, there is always the rare chance that the venue is at fire code capacity and they cannot admit the extra guest.
