We have booked POR for a stay in late Oct. (1st time on the grounds...yea!!!) and I'm wondering how it works to have dining reservations at other resorts...do we take a bus to a theme park and then another bus from that theme park to the resort with the restaurant? Is there a more direct route?

Unless you have a car, bus is the way to go, unless you want to take a taxi. A lot of people choose the taxi because it is quicker.

Disney doesn't provide direct transportation between resorts. Your only option would be to transfer at a theme park or DTD. I wouldn't recommend using DTD as a hub; the buses run less frequently and it'll take a LONG time to get where you're going.

If I don't have a rental car, I use a taxi to travel between resorts. The $15 or so that it costs is well worth it, to get there in 15 minutes instead of spending an hour or more on buses.
