ADR - Which Restaurants fill up the quickest?

Hello,
Myself and my partner will be in Orlando next May and part of our trip we'll be going to Disney. We've been twice before but haven't really eaten anywhere of note, just stalls and a couple of quick service in the parks. As this is our third time going, we want to try some nice restaurants either in the parks or even in some of the resorts. I know that some restaurants need to be booked in advance due to them being so busy.
I have two questions, we're not staying on site, so when can we book a table at a restaurant before our stay? I assume 180 days out is for hotel guests only?
Second question, if we can pre-book tables, where would people recommend? The only thing we're both not big fans of is seafood but other than that, we're open to suggestions.

Anyone can book ADRs 180 days in advance.

The second question for me is hard. We mostly eat counter service or off-property to save money. As far as table service goes, Sanaa at Animal Kingdom Lodge is my favorite place to eat - you can book a reservation easily - I recommend lunch due to the better prices and the awesome bread service.

We ate at California Grill on our last trip and really liked it. Our reservation was during the halloween firework show at MK, so that was spectacular.

Hi! California Grill is our favorite for a nice night out, that one usually fills up at the 180 mark. You do not have to have an on-site hotel reservation to book the restaurants at 180 days. As far as other places we always eat at are Jiko, Narcoosee, Flying Fish. Those 3 aren't as hard to book, probably Narcooseee would be the most difficult of the 3, but easily obtainable. Restaurants that definitely require 180 days are Ohana, Be Our Guest and sometimes Homecomin'.

I'd vote Jiko or Citricos (at the Grand Floridian).

For a fun time, I'd also look at Ragland Road in Disney Springs.
