this is my first time doing this so...at the 180 day mark, which to me looks like 6 am tues for the 2nd of may...how am i able to view the reservations for anything after the first day??

If you are staying on disney property, you can link your reservation number to your dining reservations. It's on the page to make the dining reservations. The additional dates should show up once you have your reservation linked.

so if i don't have it booked yet, i have to go to the 180 days out route-so i can only do 1 day at a time?

Yes, if you have not booked an on site hotel (even if you plan to stay on site and just haven't booked yet), you will have to make reservations each day.
