ADR question

I am new to the whole ADR thing, actually when I first started coming here to DIS I was very ANTI ADR!!! But I went last August with a couple of ADRs in my pocket and I was pleasently surprised at how easy it made the trip for us. I was lucky that trip in that I was able to get 2 ADRs 3 weeks before my trip. I have another trip booked for this coming August but would like to get all my ADRs in place as soon as I am able to. SO...what is the time period..180 days? So thats 6 months, 2 months away.
The question I have is does it need to be 180 days from the first day of your stay or 180 days from the date you want your ADR for? I would hate to have to call EXACTLY 180 days before each day and have to call 5 days in a row for reservations. Did I make sense at all?

Oh, and while I already know that my dds want to go to the Garden Grill and the SCI-FI cafe, where else should I think about with 2 very picky eaters? Think mac and cheese and chicken fingers, maybe pasta only type eaters. So I know Le Cellier is out because they won't touch anything there. Thanks.
 
What about the Plaza resturant in Magic Kingdom? They do burgers and salads and lots of American style food (including Mac & Cheese).
Also sounds like buffets might be a good option. Boma's at Animal Kingdom Lodge is good because although it does have some African types of food it also has the classic American staples too so means that you get the best of both world.
 
If you are staying on site, you can book your ADRs at 180 days out from your check in date. On that 180 day date you can book the next 10 days of ADRs. If you are staying more than 10 days, you need to call back.

If you are staying off site, you can book each day at 180 days out from the date you want to dine.

You just type in the date for the event you are interested in and it tells you when you can make reservations. It includes all kinds of events with other lead times, everything from Mickey's backyard barbeque (365 days) to golf tee times for off site guests (30 days).


ETA: My family includes picky eaters, at that age they enjoyed Crystal Palace, Biergarten, Liberty Tree Tavern, and Planet Hollywood. Check out the menus, you may be pleasantly surprised.
