Sounds like you have a great start. My first thought is to change your CP meal to breakfat at 8:00 a.m. so that you get into the Magic Kingdom before the crowds and can pictures of an almost empty Main Street. But if you aren't breakfast people or early risers then leave as you have it. The only restaurant we have done at Downtown Disney recently is Fulton's and they are not on the dining plan (we do not like Rainforest Cafe or Planet Hollywood. Wolfgang's was okay--but it's been awhile since we've been there.
Other suggestions for at the parks/resorts would be: Yak & Yeti at Animal Kingdom, Mama Melrose at the Studios, Biergarten and Rose & Crown at Epcot and Plaza Restaurant at the Magic Kingdom. Also, there is Boma at Animal Kingdom Lodge which gets rave reviews.

Happy planning...and you are doing great.

I would split up day 3 & 4 and put them on 6 & 7. That's a lot of food in one day at least for us.
Have a great trip!

we love Wolfgang Puck Express in DTD (it's a CS)

if you are going to be on the deluxe plan, you might want to add a signature dining restaurant or two (instead of eating at so many separate TS places, which takes up a lot of time). We loved CG and it was actually quite child-friendly. more so than Artist's Point for sure! And you can't beat the view!!!

We also love Boma in AKL and Kona in the Poly.
