Adding guest to existing resv. and not dining plan?

I rented points to go down in December and plan on adding the dining plan. I have a few questions.

1) The reservation has already been made for 8 nights for 2 adults and a 2yr old. Can I add my Mother to the reservation for a couple of nights?

2) If I do add her do I need to do add her to the dining plan?

3) If yes for #2, do I pay for 2 nights on the dining plan, or all 8?

You will need to have the DVC owner add your mother to the reservation. You will need to pay for all 8 nights of the DDP for her, under published Disney DDP policies. Teh DDP was not designed to allow folks arriving/departing during the reservations. It was designed for regular Disney cash bookings, where most people stay 4 to 7 days and do not have people coming and going. That is why the Dining Plans aren't always the best choice for DVC stays.

If you do end up getting the DDP, then after she leaves you can continue to use her credits, especially if you like signature meals. My MIL did this after my BIL left early last year. Actually she had more CS meals then TS meals, and of course snacks.
