Our flight comes in late the night before cruise. I planned to book the Hyatt at the Orlando airport on my own. How do you book the DCL bus to the port the next morning?
With a family of 5 there are no cheap options!!

Call DCL or your TA and have them add the transfers and let them know you will be staying at the Hyatt.

That’s very close to the $200 including tax that we paid to DCL in March of this year. Lowest rate I could find to book myself was $220 plus tax.

I find that the price varies considerably with time of year same as most hotels. Last year we got it for $169 plus tax in late November. Checked it out on their site and then passed the info onto my TA who couldn't get a better price but since she was booking everything else I saw no need to do it myself. Just for fun (research, I called it in case I may need to book a cruise on short notice - I wish), I checked it out for different times of year and it went as high as $250-275.

I'd do a quick price check with Happy Limo for the port transfers. We've used them several times for our family of 4. For us, it works out just slightly more expensive than the DCL buses, but we completely control our travel time and they'll stop at the grocery store for you en route. For a family of 5, you may find it to be the same price or a bit less.
