They might be able to accommodate. When you check in you can tell them you have 5, not 4. Sometimes it’s no big deal and they can fit the extra person, sometimes, especially during busy times, it’s not possible.
Unfortunately, due to limited capacity and required distancing, you need to keep searching for a table that will safely seat 5 or 6. You will be okay booking for 6 and only 5 showing up. Having a table for 4 and wanting to fit 5, not so much.
You may have more luck since it’s not a Disney restaurant. Don’t they take the Landry’s card, too? You could also call directly to try to get a reservation.
It is not guaranteed, but we have been able to do it at several restaurants. We have a family member that lives near WDW and she can't always commit to a certain time because of work so she has shown up last minute before and they have always been accommodating. You may have to wait past your ressie time.

One way around that is to make any reservations where she might join you for the number of people including her. You're never penalized for showing up with less than the reservation is for, but you may not always be able to add one. You "always can" until you can't - and "But you've always done it before" won't cut it.
