Hi there, does anyone know if it is possible to add a day, or two, to a 2-day Parkhopper ticket? Can you tell me how do to this if it is possible?

Yes, it is possible to add days to a park ticket by paying the difference between what you paid and the ticket price...so if you buy your tickets before tomorrow's price increase, you'll have a larger difference to pay.
