If we add on points, is it possible to add additional names to the added contract that weren't on the original deed? I understand it costs money to add money to add names to the original deed, I'm just wondering if we were to add names to the add-on that weren't on the original deed if that would be allowed and if the added names would also get a DVC membership card.

Yes, you can.
DW and I bought our original contract, then added on a few years later.
Then we added on again, with our two DDs on the latest contract. You will get a new member number and have to have a separate logon to the MS website for that one contract. Since the contract is titled differently than your original contract you can not have the same member number.

1) you can alter the deed
2) if you do, technically i don't think it would continue to be an "add-on" but rather a completely separate membership. which will make it more complicated to use.

You can add names to your original first deed for just a small fee by doing it yourself. Contact DVC administration for instructions and additional information.

Then when that is done, make your new purchase, same UY, same names and the new purchase will truly be an add-on.

As asked, the answer is no. You can't pay DVC to change the names as part of an add on. You can buy a separate contract, even a small one or you can change your existing deed then add on or buy resale. If you buy a separate contract it's truly separate and you will be treated essentially like 2 separate owners so it's more difficult to use the points from each for a single stay. Plus for add ons DVC will not do it at all unless you meet the new purchase minimum, resale is more flexible in purchase. For smaller contracts it's almost always better o change the names on your existing contracts first.
